What’s for dinner? Casserole

Wednesday nights we usually go to our westside church picnic where we always have hot dogs and hamburgers. But, last night with two kids under the weather we decided to stay home.  I was stuck trying to find something to make for dinner. I looked in the cupboards and kept finding I was missing an essential ingredient to our normal meals. I wanted to make a somewhat healthy meal with what I had but also make it simple. So, I made do with what I had.

We had Tuna noodle casserole with peas. I had never made this with Tuna but I had an abundance of Tuna and it sounded like the easiest meat to add. It is a good recipe to use if you have some leftover meat. So, here’s the recipe

  • Noodles( I usually use egg noodles but I think whatever you have works)
  • Cream of Mushroom Soup
  • Milk (about a soup can full)
  • Frozen Peas or Corn
  • Meat – Tuna, Ham, Turkey, or Chicken
  • Shredded Cheddar Cheese

Cook your noodles. Drain water. Mix with the next four ingredients and some cheese. Put in casserole dish and place remaining cheese on top. Cook for 20 min or until cheese bubbles at 350°.

Rating- 2 out of 3 kids ate it well, the other took a lot more persuasion. I thought it was pretty good but definitely prefer any other kind of meat.
