I have been trying to make our meals a little healthier lately by adding whole wheat. I have been trying to buy more whole wheat noodles and I bought my first bag of whole wheat flour. So I have been trying new recipes adding the whole wheat flour. Blueberries were on sale last week and the kids love blueberry muffins. So, I decided to try and make them from scratch.
Here is the recipe I used from www.bettycrocker.com :
2 Tablespoons brown sugar 1 Cup all purpose flour
1/4 teaspoon cinnamon 1 Cup whole wheat flour
3/4 Cup skim milk 3 teaspoons baking powder
1/4 Cup vegetable oil 1/2 teaspoon salt
1/4 Cup honey 1 Cup blueberries
1 egg
Preheat oven to 400°. Mix brown sugar and cinnamon.
In separate bowl beat milk, oil, honey and egg. Stir in flours, baking powder and salt(batter will be lumpy). Gently fold in blueberries.
Divide into greased muffin pan-12 cups.
Sprinkle with brown sugar mixture.
Bake 20 minutes or until golden brown.
Rating: They were delectable! In my opinion. The kids ate the muffins while picking the blueberries out. Apparently they like fake blueberry muffins better. My husband doesn’t like baked fruit. So, into the freezer they went for me to enjoy on another morning.
